There's a scene from a vintage Ferrero Rocher TV advertisem*nt that I'll never forget: A white-gloved butler enters a glamourous party at the Ambassador's mansion. He carries a tray stacked with golden Ferrero Rocher. Everyone ohs and ahs.

And the little me in 70's Germany wanted to be one of those beautiful creatures, so badly! Or at least eat Ferrero Rocher. Which I did whenever I could.

Fast forward to today. Why did I not think of making a sugar-free Ferrero Rocher recipe earlier? My healthy version may not have the tell-tale golden wrapper, but it tastes (dare I say it) actually better than the overly sweet original.

I've adapted my keto truffles to make this recipe. The centre is the same creamy avocado-chocolate filling. I've simply pressed a hazelnut in the middle, rolled the truffles in chopped roasted hazelnuts and coated the lot in 90% dark chocolate.

What is Ferrero Rocher?

Ferrero Rocher is a popular chocolate and hazelnut truffle by the Italian confectionary company Ferrero. It was first sold in Europe in 1982 and has been a worldwide hit. Today it is sold in 140 countries.

With its distinctive golden wrapper, Ferrero Rocher is marketed as a "luxurious and sophisticated chocolate praline".

What is Ferrero Rocher Made Of?

The original Ferrero consists of a whole hazelnut surrounded by a chocolate Nutella filling. This deliciousness is encased by a crisp wafer shell covered with chocolate and roasted hazelnut pieces.

Why This Recipe Works

EASY. You won't believe how easy it is to make homemade Ferrero. As I mentioned above, the recipe contains only 5 ingredients.

DELICIOUS AND HEALTHY. Yes, it is possible to achieve both of these at the same time. My recipe is sugar-free, suitable for diabetics, gluten-free, dairy-free and naturally keto.

A BRILLIANT EDIBLE GIFT. I totally get it if you'd prefer to enjoy these by yourself. However, my DIY Ferrero Rocher balls happen to make a great edible gift during the holiday season or throughout the year.

Ingredients for Healthy Homemade Ferrero

I have taken some creative liberties and changed the ingredients to make this awesomely healthy version.

Here is a list of what you'll need:

Avocado - We are using this in place of Nutella. The avocado must beperfectly ripeandwithout brown spots. If it’s stringy, hard and bitter – please don't use it. Give your avocados a gentle squeeze to check that it is ripe. And stay away from the “ripen at home” varieties. From my experience, they often go from rock-hard to brown.

Dark Chocolate - Since this recipe contains only a handful of ingredients, it is essential that these are the best quality you can get. I used Lindt chocolate with 90% cocoa solids.

Powdered Sweetener - I used a powdered erythritol monk fruit sweetener blend for my keto Ferrero Rocher truffles. Allulose would also be a good option. If carbs are not a concern, feel free to use honey or maple syrup instead.

Salt - A dash of sea salt enhances the flavor of the chocolate. It is not essential, but I do recommend adding it.

Hazelnuts - We are using one hazelnut for the centre and chopped hazelnuts in the coating.

Instructions

Let's make a sugar-free Ferrero Rocher recipe! Here are all the steps. For detailed instructions and amounts, scroll down to the recipe card.

Step 1

Blend the avocado flesh with powdered sweetener and salt.

If you have a very ripe avocado, you can mash it with a fork.

I recommend blending it with an electric mixer or stick blender. We want that avo super smooth. No one wants to find green bits in their truffles!

Step 2

Break the chocolate into small pieces and melt. There are 2 ways to do this:

In a double boiler / bain-marie: Place the bowl with the chocolate over/into a saucepan with just-boiled water. Once the chocolate is half-melted, take off and stir until fully melted.

In the microwave: Microwave on high for 60 seconds and check. If the chocolate is not yet half-melted, zap for another 30 seconds. Then remove and stir until fully melted.

We're trying to AVOID getting the chocolate boiling hot, because then it can curdle or seize. That's why it's essential to remove it from the heat source BEFORE it's fully liquid.

Step 3

Pour the chocolate into the avocado mix and blend.

Step 4

Scoop the mix out with a teaspoon and roll it into truffles.

This is the messy bit - have fun with that and please, lick your fingers afterwards!

Step 5

Press a hazelnut into the centre and roll in chopped hazelnuts.

Step 6

Melt the coating chocolate and dip the truffles into it.

Freeze until set - about 5 minutes.

Expert Tip

Use roasted hazelnuts. I bought mine roasted for a better flavour. If you can't get them ready-roasted, dry-roast them yourself in a frying pan. Keep moving the nuts around until they are golden.

Variations

I am convinced you'll love the recipe exactly as I have written it. However, here are a few ideas on how you can tweak it.

Use Nutella. If avocado is not your thing, make a filling by using ⅔ cup or 160g of my sugar free nutella and 2 tablespoons or 25 grams of butter. Melt the butter and stir it into the homemade Nutella. Then, refrigerate the mixture for around 1 hour until is has set sufficiently and can be shaped.

Change the chocolate. It is possible to use either unsweetened chocolate or sugar-free chocolate chips such as Lily's. For unsweetened chocolate, add an additional 1-2 tablespoons of powdered sweetener to the recipe. Lily’s chocolate chips are sweet already, so 1 tablespoon of powdered sweetener in total may be sufficient.

Recipe FAQs

Can I make the truffle filling with cocoa powder?

I don't recommend it. Why? Because chocolate containscacao butteras well, which helps firm up the truffles.
If you insist though, I would try 4 tablespoon cocoa powder PLUS 3 tablespoon coconut oil(or, even better,cacao butter– if you can get hold of it) to increase the fat content. Taste and adjust if necessary.
Note that I have not tried this myself yet. Also, if you use coconut oil, the end result will be softer.

Can I use confectioners sugar?

Yes, the recipe works with regular powdered sugar. I always use sugar substitutes that are a 1:1 replacement to regular sugar.

Storage

Homemade Ferrero Rocher stay fresh for 3 days at room temperature in an airtight container. Or, store them in the fridge for up to 1 week.

The recipe is suitable for freezing. Freeze for up to 3 months.

My version is sugar free and actually nutritious because the filling is made with avocado! And just in case you're wondering - no, you cannot taste the avocado at all. You're getting exactly what you've signed up for: chocolatey, creamy goodness by the mouthful!

Ingredients

  • 6 oz avocado flesh 170g, 1 large/ 2 small avos, ¾ cup mashed
  • 3.5 oz dark chocolate 100g, 90% cocoa solids or sugar free
  • 2 tablespoon powdered sweetener or honey
  • teaspoon salt
  • 16 blanched hazelnuts 10g

For the Coating

  • cup chopped hazelnuts 40g
  • 1.25 oz dark chocolate 50g you won't use all of it

Instructions

  • Blend the avocado flesh with the powdered sweetener and salt.

  • Melt the chocolate - up to 90 seconds in the microwave, then stir until fully melted. Alternatively, melt in a bain-marie/double boiler.

  • Pour the melted chocolate into the avocado mix and blend.

  • Scoop out with a teaspoon and roll into truffles.

  • Press a hazelnut into the centre and roll in chopped hazelnuts.

  • Melt the coating chocolate (up to 60 seconds in the microwave, then stir) and roll the truffles in it.

  • Freeze until set.
