Here I explain the best ingredients for broccoli cheddar stuffed chicken breast, what each one does in the recipe, and substitution options. For measurements, see the recipe card.

Chicken:

  • Boneless Skinless Chicken Breasts – These are best for stuffing. Boneless skinless chicken thighs would be too small to stuff, but you could sandwich the filling between two of them if that’s what you have on hand. You could even use the stuffing for pork chops (see my stuffed pork chops recipe)
  • Seasoning – Including sea salt, black pepper, dried oregano, and paprika. If you have poultry seasoning on hand, that would make an excellent addition.
  • Olive Oil – For searing the chicken to give it a nice golden crust on the outside. You can use another neutral cooking oil, such as avocado oil.

Filling:

  • Broccoli Florets–I used fresh broccoli, but frozen would work as well. Either way, you’ll need to chop it finely to fit inside the filling.
  • Cheddar Cheese– Sharp cheddar cheese tastes delicious in this stuffed chicken breast recipe, but any kind works (including pre-shredded varieties).
  • Cream Cheese – Leave the cream cheese on the counter for about 30-minutes to soften. Using cold cream cheese will make it difficult to mix the stuffing ingredients. Or, place it in a microwave-safe bowl and heat in 30 second increments until it softens.
  • Spices – Season the filling with garlic powder, sea salt, and black pepperto taste.

How To Make Stuffed Chicken Breast

  1. Butterfly the chicken. Use a sharp knife to slice a pocket in each chicken breast lengthwise horizontally, being careful not to cut all the way through.
  2. Season. Coat chicken with salt, pepper, oregano, and paprika. Set aside.

  1. Make the filling. In a large bowl, mix filling ingredients: chopped broccoli, shredded cheese, cream cheese, garlic powder, salt, and pepper.
  2. Stuff the chicken. Divide the filling into 4 portions. Stuff the mixture inside the chicken breasts.
  1. Seal. Fold the chicken breasts closed and secure with toothpicks.
  2. Sear. Heat a couple tablespoons of olive oil in a largeoven safe skillet (or a large cast iron skillet) over medium-high heat. Sear both sides of the stuffed chicken breast, just until browned. (It does not need to cook through at this step.)

  1. Bake. Transfer the skillet to a preheated oven. Bake broccoli stuffed chicken until cooked through. Use a meat thermometer to check that the internal temperature reaches 165 degrees F, making sure to measure inserted into the chicken and not the filling.

Storage Instructions

  • Store: Allow chicken to cool. Store in the refrigerator in an airtight container for up to 3 days.
  • Reheat: Warm up stuffed chicken breast recipes in the microwave, in the oven at 350 degrees F, or in the air fryer at 325 degrees F.
  • Freeze: Allow to cool, then wrap in plastic or aluminum foil and place in an airtight container or freezer bag. Freeze for up to 3 months.

  7. Transfer the skillet to the oven. Bake broccoli stuffed chicken for about 20 minutes, until cooked through. (The internal temperature of the chicken should reach 165 degrees F (74 degrees C) using a meat thermometer — make sure to measure the temp of the chicken, not the filling.) Remove the toothpicks before serving.
